Most tea bags use fannings — the dust and broken leaves left over from processing. They brew fast but taste flat and often bitter. Whole-leaf jasmine green tea brews a cleaner, more aromatic cup that makes a noticeable difference in milk tea.

Ingredients (1 serving)
- 8g (about 1.5 tablespoons) loose-leaf jasmine green tea
- 200ml hot water at 80°C (175°F)
- 40ml whole milk or oat milk
- 20ml simple syrup (adjust to taste)
- Ice
- Tapioca pearls (optional)
Instructions
- Brew the tea: Steep 8g of jasmine green tea in 200ml of water at 80°C for 3 minutes. Don't use boiling water — it will make the tea bitter.
- Strain and chill: Strain the leaves and let the tea cool to room temperature, or pour over ice to cool quickly.
- Sweeten: Add simple syrup while the tea is still warm so it dissolves evenly.
- Add milk: Pour your cooled tea over ice, then add milk. Stir to combine.
- Optional: Add cooked tapioca pearls. Serve with a wide straw.

For high-volume operations, brew a large batch concentrate: use 20g of tea per 300ml of water, steep for 3.5 minutes, then dilute 1:1 when building drinks. This keeps your base consistent across the whole shift.
Store brewed concentrate refrigerated and use within 24 hours for best flavor.
