Hibiscus Tea Recipe for Cafes: Fruit Teas and Sparkling Drinks

Hibiscus tea is one of the easiest menu items to add and one of the most visually impressive. Whole dried hibiscus flowers brew a deep ruby red without any added color — the pigment is entirely natural from the flowers themselves. The flavor is tart and floral, similar to cranberry, and it works extremely well with citrus, mint, and sweeteners.

Brewing Hibiscus Tea

Hibiscus brews best in hot water, but unlike most teas, you can also cold-brew it overnight for a softer flavor.

Hot brew:

  • 8–10g dried hibiscus flowers per 500ml water
  • Temperature: 90–95°C (195–205°F)
  • Steep: 5–7 minutes
  • Strain and cool

Cold brew:

  • 15g dried hibiscus per 500ml cold water
  • Steep: 8–12 hours in the refrigerator
  • Strain and use within 48 hours

Hibiscus Fruit Tea

The most common application in boba shops:

  1. Brew hibiscus concentrate (double strength — 15g per 500ml).
  2. Build your drink: 150ml hibiscus concentrate over ice.
  3. Add 50ml passion fruit or mango syrup.
  4. Top with sparkling water or lemonade.
  5. Optional: add sliced strawberries or lychee jelly.

Hibiscus Lemonade

  1. Mix 150ml hibiscus tea with 50ml fresh lemon juice.
  2. Sweeten with simple syrup to taste.
  3. Pour over ice and top with sparkling water.
  4. Garnish with a lemon slice.
