If you've been making milk tea with tea bags, the upgrade to loose leaf is one of the simplest improvements you can make to your menu. The flavor difference is real and your customers will notice.

Why Loose Leaf Wins

Tea bags are typically filled with fannings and dust — the smallest, broken particles left over from leaf processing. They brew fast but extract unevenly, often producing astringent, one-note cups. Loose leaf tea uses whole or large broken leaves that unfurl fully during steeping, releasing more complex flavors and a richer color.

For milk tea specifically, you want a tea that produces a strong, clear color and bold flavor that doesn't get washed out by milk. Whole-leaf black teas do this consistently; tea bags often don't.

Basic Milk Tea Recipe (Loose Leaf)

Ingredients (1 serving)

  • 8–10g loose leaf black tea (WAO Whole Leaf Black Tea or Gold Black Tea)
  • 200ml water at 95°C (205°F)
  • 50ml whole milk or your milk of choice
  • Simple syrup to taste
  • Ice

Instructions

  1. Brew: Steep 8–10g black tea in 200ml of near-boiling water for 3.5–4 minutes. For a darker, stronger cup, go 4 minutes. Don't over-steep or you'll get bitterness.
  2. Strain: Remove the leaves promptly after steeping.
  3. Sweeten: Add simple syrup while the tea is hot.
  4. Chill: Let cool to room temperature, or pour over ice to speed it up.
  5. Build the drink: Pour cooled tea over ice, add milk, stir.

Scaling for High-Volume Operations

For boba shops making hundreds of drinks per day, batch brewing is the way to go. Use a ratio of 25g per 500ml water, steep for 3.5 minutes, then dilute when building individual drinks (roughly 1:1 ratio, adjusting to your preferred strength).

Brewed concentrate should be refrigerated and used within 24 hours. After that, the flavor degrades noticeably.
